Why:

This shows that Orsino has a great love and knowledge for music. It
also shows that he is in love with someone, later reviled to be
Olivia, but he can't go straight to that person. Shakespeare has
created an opportunity for revels and festivities within the
framework of this comedy, the idea of music being the food of love
allows for a great deal of music to enter into the play under the
premise of love.
